My Commercial Refrigerator Is Not Cooling: What Should I Do?

Your commercial refrigerator won't cool. Food stocks are in danger. A restaurant can lose several thousand dollars overnight, not to mention public health risks and regulatory fines.

Here's how to quickly identify the root cause of the problem and when to call in a technician.

Key points to remember

  • Clogged condenser coils are the main cause of cooling problems
  • In Canada, the law requires a maximum of 4°C for refrigerated foods
  • A poorly adjusted thermostat compromises the entire cold chain
  • Faulty seals cause a significant loss of cooling capacity
  • Monthly maintenance eliminates the majority of avoidable breakdowns

Why is the operation of a commercial refrigerator crucial?

A commercial refrigerator that maintains the right temperature protects your food stocks and health of your customers. Beyond the regulatory threshold, bacteria multiply rapidly in foods. A cooling failure may result in major financial losses, compromise your compliance to health standards, and expose your establishment to fines or closure. Storage temperature is not negotiable in a commercial environment.

Check the simple causes first

Verify that the device is plugged in and that the breaker did not jump. Sometimes these checks fix the problem right away. Check the thermostat. An employee may have changed it during cleaning. The temperature should remain between 0°C and 4°C according to Canadian standards. Is the interior overloaded? Too many products may block airflow. Reorder to release the vents.

Clogged condenser coils

Coils remove heat. When they are covered in dust or grease, their effectiveness falls. The accumulation takes place in a few weeks in commercial kitchens. A dirty condenser forces the compressor to work twice as hard. Clean up every three months for better prevention. In greasy environments, switch to monthly.

To clean : unplug, locate the coils (back or bottom), brush gently or vacuum.

Door seal problems

The joints ensure tightness. When they are worn or dirty, hot air comes in, cold air goes out. The device is running nonstop. Do a quick test: seal on a Canadian currency note. If you remove it without resistance, the joint is broken. Clean weekly. If the rubber is hard or cracked, Replace it immediately.

Compressor, cooling system and air circulation

The compressor circulates the refrigerant. When it lets go, the food heats up by A few hours. A compressor that runs 8-10 hours nonstop seeks a temperature that it can no longer produce. If it never starts, the relay or compressor is at fault. Abnormal noises : metallic rattling, dull hum, knocking.

Les refrigerant leaks require immediate intervention. Only one certified technician can handle these regulated products.

Les Vents circulate cold air. If you block them, you create hot, icy areas. In the kitchens under fire, employees pile up without looking.  Result : the bottom freezes while the top stays lukewarm. Gardez 8 free centimeters around each vent.

Common mistakes to avoid

The worst mistake : place hot food directly into the refrigerator. A tub of steaming soup raises the temperature by several degrees. Allow to cool well before refrigerating.

Wait that the problem can be solved by itself. New noises or frost are warning signs. Cleaning costs a few dozen dollars. A new compressor? Several thousand.

Fast diagnosis

  • Temperature too high? Check the thermostat and clean the coils.
  • Excessive frost? Gasket or door problem.
  • Unusual noises? Clogged fan or worn out compressor.
  • Device hot to the touch? Dirty condenser.
  • Runs continuously? Air leak or faulty thermostat.

What to do now

Verify : clean coils, watertight joints, clear vents, correct thermostat. These four points fix the majority of breakdowns. If it's still not getting cold after these checks, it's time to call a professional. Compressor problems, electrical system problems, or refrigerant leaks require the intervention of a certified technician. Don't wait, that the situation worsens and puts your stocks at risk.

Protect your investment and your stocks

A refrigerator that works protects your food, your customers, and your reputation. Preventive maintenance is less expensive than throwing away several thousand dollars worth of merchandise.

Canadian Law Requires a maximum of 4°C for refrigerated foods. Above, bacteria multiply. A faulty refrigerator exposes your establishment to fines, lawsuits, and can cost you your operating license.
